- 60 ml gin
- Lime wedges
- 15 ml sugar syrup (or to taste)
- Add three lime wedges to glass and muddle (squash to release juice).
- Place 8 to 10 mint leaves in the palm of your hand and ‘clap’. This will release the essential oils. Add to glass.
- Add ice.
- Add gin and sugar syrup.
- Stir. Stir. Stir.
- Add mint sprig to garnish.

- Try not to tear the mint leaves as this can add a bitter flavour.
